Milk Rice With A Cherry Compote
Milky rice pudding is a comforting snack, perhaps because of its associations with the flavors of our infancy. But in this recipe, a brown sugar-cherry compote adds some zing, especially when it’s been simmered with the juice from two oranges. As its maker says, it’s good enough to lick from the jar.
INGREDIENTS
For rice:
1 cup rice
3 cups milk (one extra for serving)
pinch of salt
lemon zest from 1/2 lemon
1/4 tsp vanilla extract
2 tbsp sugar
2 tbsp yogurt
For cherry compote:
handful of cherries
2 tbsp brown sugar
juice from 2 oranges
